The term "tapa" comes from the Spanish word "tapar," loosely meaning "to put the top on." The culinary experience is born from the practicality of placing a slice of bread atop one's glass of sherry between sips, originally emerged from Andalusian taverns. "Putting the top on" prevented the drinker from sharing his sherry with the hovering fruit flies.

Eventually seeing the naked slice of bread as an invitation to garnish it with delectable bites of sausage, ham or cheese, the tradition evolved into our modern-day idea of tapas -- small plates or appetizers served as the ideal accompaniment to one of Spain's noble wines, creating the ultimate dining experience. Chef William Annesley began preparing dinners for friends, which created a huge buzz fueling a new profession as private chef to such celebrity clientèle as Keifer Sutherland, Quentin Tarantino and Gwen Stefani.
